The philosophy of our restaurant is based on the constant pursuit of quality food and, consequently, on small local producers who provide healthy and sustainable raw ingredients. A key element of the tasting menus that shape our offerings is the presence of wild herbs, which are harvested and prepared to become refined and innovative gastronomic dishes. Starting from these ingredients and a work method that encourages ongoing research and training, our chef crafts his creations in tune with seasonal availability. Sigismondo Gaetani is the host who founded and has always led the Degusteria. His passion for food has been with him since a young age, first expressed in his teenage years through summer jobs in the restaurant industry, chosen with the goal of tasting different dishes and developing an increasingly refined palate. With the Degusteria del Gigante, this passion has become almost a mission: to tell the story of the region through flavors, textures, and aromas and to introduce people from all over Italy and beyond to a place rich in tradition and high-quality, authentic products.
